Brooke-o-tash
My own take on succotash — bacon, sweet potato, zucchini, and beans, roasted until it chars.
How to make it

Cook the bacon in a pan at 350°F for 30 minutes.

While it cooks, chop, dice, and add all the other ingredients to a large bowl.

Coarsely chop the cooked bacon and add it to the bowl along with the reserved bacon grease.

Mix well to combine. Taste and add more seasoning as you like.

Split between two large baking dishes, spread no more than 1–1.5 inches deep (or it gets mushy).

Bake at 395°F about 1 hour, stirring every 30 minutes, until no longer wet and starting to char.

Serve warm — it's great alongside red meat like Brooke's pot roast.

The beauty of this one is you can throw it together without much measuring — play with the quantities and find your own version.
