Shrimp, Goat Cheese & Herb Omelette
A little fancy, a little easy — the omelette I make when brunch is just for us.
How to make it

Cook the shrimp over high heat 1–2 minutes per side with a touch of salt. Remove, then dice the shrimp and chop the herbs.

Whisk the eggs, coconut milk, and a pinch of salt per egg in a bowl.

Wipe the pan clean, heat to medium, melt the butter, and add the egg mixture.

When mostly cooked, add the herbs to one half, then the Parmesan, goat cheese, and diced shrimp. Crack pepper over the top.

Fold the empty half over the filling and slide onto a plate. Finish with a few herbs or extra pepper.
