Brooke's Mayonnaise

Homemade mayo in a minute — silkier than any jar, and the base of a great aioli or dressing.

How to make it

    Put all the ingredients in a narrow jar that fits an immersion blender through the opening.

    On low speed, blend slowly from the bottom up.

  3. 3

    Move the blender up and down to work in all the oil.

  4. 4

    Increase to high and blend until thick, moving up and down.

  5. 5

    Refrigerate and use within 1–2 weeks (I usually go 3).
